Super simple Mexican tacos. No avocado or cheese needed

Make the marinade: Add the coriander, Mexican spice, Chilli powder, a few tsp of garlic paste, Sugar, a few Tbsp of salsa, with the Chicken Thigh and 1 diced red onion.

Juice a whole lemon into the marinade and mix it all together with some olive oil, water and salt and pepper. Let the marinade sit for 3 hours

Place the Chicken thigh into the oven for 30 mins at 200 fan forced. Make sure to leave the rest of the marinade for later

Heat up a frying pan to a medium heat with some olive oil and some garlic.

When the chicken is done dice it into bite sized pieces. Add the pieces into the frying pan with the remaining marinade. Turn the frying pan to a low heat to simmer

Dice some tomatoes and onion. Mix together with some lemon and coriander.

Shred up the lettuce

Warm up the soft tacos in a fry pan

Put the chicken, onion and tomatoes, and lettuce onto the soft taco and enjoy!
